The fresh legs used for San Daniele Prosciuttos are obtained from pigs that must weigh no less than 350 lbs, and must be at least nine months old. They are fed mainly cereal and whey. These hams are produced exclusively in the commune of San Daniele situated in the region of Friuli Venezie Giulia.
The typical delicate flavor of the hams from the Friuli region is the result of a process that is based on traditional techniques. The natural processing and prolonged seasoning are the elements that enhance the sweetness and intense fragrance of this high quality cured ham. According to regulations, the hams are cured with only sea salt for no less than 400 days. Additives or preservatives are never used. The color of the ham is pinkish-red with a covering of pure white fat.
In accordance with “Designation of Origin” regulations, the hams are branded under the strict control of the “Consorzio del Prosciutto di San Daniele” which guarantees that all legal requirements and
inspections have been carried out.
