To commemorate the company’s 100th Year Anniversary, we are pleased to present the Leoncini
“Centenario” Parma Prosciutto. It is a special reserve stock that is obtained from the thighs of heavy Po
Valley pigs, which allows us to attain peak levels in aroma, sweetness, and softness.
In the initial phase, the legs for Centenario hams are selected and marked accordingly on the side.
Given the large size of the fresh thighs, the processing takes a longer amount of time and particular attention is required during both the salting and resting phase. Once the maturation is complete, and after a careful check of the product’s characteristics, only the hams that qualify become part of the reserve.
At the time of shipment, they are packaged with a unique, dedicated label bearing a consecutive serial number. The minimum aging for the hams is about 24 months, and the minimum size is about 20 lbs. The exact maturation is established by our production manager from time to time for each single piece.
